Addiction Habanero Meatloaf

2 lbs Ground beef
1 lb Ground pork
8 oz Ground bacon
1 cup Onion, finely chopped
1 tbs Garlic clove, minced
1 tbs Olive oil
1 cup Panko bread crumbs
1 cup Italian-style bread crumbs
1/4 cup Fresh parsley, chopped
2 Eggs
1 tsp Kosher salt
1/4 tsp Black pepper
1 cup Ketchup
6 tbs Red wine vinager
6 tbs Brown sugar
4 tbs Dijon-style mustard
6 tbs Worcestershire sauce
4 tbs Tomato paste
2 cup Beef stock
4 tbs Addiction Habanero Sauce
1/4 cup Parmesan Cheese (optional)

  1. Preheat oven to 350°
  2. In a small bowl, combine ketchup, red wine vinegar, brown sugar, dijon mustard, Worcestershire sauce, tomato paste, beef stock, and habanero sauce and set aside when done
  3. Sauté onions and garlic until translucent and set aside when done
  4. In a large bowl, combine beef, pork, bacon, eggs, breadcrumbs, salt, pepper, parsley, onion mix, 1 Cup of tomato mixture, and optionally, parmesan cheese
  5. Form into 2 loaves. Place onto sheet pan with a bakers rack lightly oiled. Make a slight trough on the top of each loaf. Pour enough tomato mix onto each loaf without running over sides.
  6. Bake for one hour and 15 minutes, basting occasionally with tomato mix
  7. Reduce remaining sauce over med-high heat until desired consistency to use as a sauce on your cooked meatloaf

  • Tip: Bacon can be chopped fine or grind in food processor if you do not have a meat grinder
